Ingredients
- Cut 300g of cucumber into 1-inch chunks
- 3 beefsteak tomatoes, cut into 1-inch chunks
- 2 cloves garlic
- Trimmed Purple Mizuna Microgreens
- 4 tablespoons olive oil
- Salt and pepper
Method
- In a large salad bowl, combine the cucumbers, tomatoes and onions (if you like).
- Top with the garlic, microgreens, olive oil, lemon, salt and pepper, stirring well to coat the vegetables evenly. Taste and adjust seasoning.
